As the temperature drops, champagne takes on a different personality.

This special winter tasting explores the richer, more generous side of the region through wines built around Pinot Noir and Meunier—grapes that bring depth, texture, spice and comforting warmth without sacrificing freshness.

Rather than the lean, citrus-driven styles many associate with summer, these champagnes reveal notes of baked apple, brioche, roasted nuts, stone fruits and subtle spice, making them perfect companions to winter dining and fireside conversation.

We’ll taste five exceptional champagnes, each expressive in different ways:

Drappier Carte d’Or
A benchmark expression of Pinot Noir from the Côte des Bar. Powerful yet remarkably pure, offering orchard fruit, spice and impressive vinosity.

Billecart-Salmon Sous Bois
One of Champagne’s great gastronomic wines, fermented in oak to deliver remarkable texture, complexity and finesse while retaining the elegance that defines the House.

Vilmart Grand Cellier
From one of Champagne’s finest grower-producers, this oak-aged Premier Cru Champagne layers ripe stone fruits, pastry notes and remarkable precision.

Henri Giraud Esprit Nature
A distinctive, terroir-driven Champagne showcasing the richness of Aÿ Pinot Noir, crafted with the House’s signature approach to oak maturation.

Bérêche et Fils Brut Réserve Vieilles Vignes
A refined, old-vine Champagne from Bérêche et Fils, showcasing depth, vibrant acidity, and complex notes of citrus, brioche, and toasted nuts.

Throughout the evening we’ll explore how grape variety, oak, terroir and winemaking combine to create champagnes that are perfectly suited to the cooler months.

Whether you’re looking for wines to enjoy beside the fire, pair with slow-cooked winter dishes, or simply discover a richer expression of champagne, this promises to be an engaging and delicious evening.

Winter is the perfect season to pair champagne's richness, texture and vibrant acidity with comforting ingredients such as earthy mushrooms, succulent poultry, luxurious truffle and the nutty complexity of aged Comté. Guests will be served a delicious light menu with these concepts in mind.
